I am a Senior Lecturer in Human Nutrition and Dietetics in the School of Allied Health, University of Limerick.
My research interests include 1) the effect of dietary fats on insulin resistance, inflammation, and adiposity and 2) evaluating a whole of diet approach based on the traditional Cretan Mediterranean Diet and its effects on metabolic health. My nutrition and dietetic clinical and research expertise is in the nutritional management of respiratory and in the critically ill.

Current Active Research Projects
-Chief Investigator on the project ‘MEDINA’ – MEDIterranean diet in Non Alcoholic fatty liver disease (RCT), a multicentre randomised controlled study in 4 hepatology clinics in metropolitan hospitals in Melbourne, Australia investigating the effects of a Mediterranean versus a Low Fat diet on insulin resistance and liver specific outcomes in Non-Alcoholic Fatty Liver Disease.
- Co-Investigator on ‘AUSMED’ – The AUStralian MEDiterranean Diet Heart Trial (RCT), a multicentre randomised controlled trial to investigate the effects of a Mediterranean versus a Low Fat diet on the secondary prevention of coronary heart disease.
- Co-Investigator of the ‘Polyphenol Study’ investigating the effect of olive oil on markers of cardiovascular disease risk.
- Co-Investigator on two projects looking at the effects of gene potentiators on nutritional status and body composition in Cystic Fibrosis.
- Chief Investigator for a pilot study ‘Segmental Intestinal Permeability in the critically ill mechanically ventilated adult patient versus healthy controls’.
- Co-Investigator for a study entitled ‘Energy requirements of critically ill obese patients: does goal directed nutrition using indirect calorimetry improve energy delivery’?
